Yeah I’m really tired of hearing people say this. What would be super fantastic is figuring out a way to make fresh food more affordable and more available to people who are “low income”. It’s really too bad that the cost of buying box of hamburger helper is cheaper than buying a box of strawberries. What’s wrong with that picture?

Can we just talk about how much of a genius I am? I just made a smoked gouda, apple, bacon panini. 
I’m about to go see Cabin in the Woods so I have to make this super quick! 
I cooked the apples in bacon grease. Added a little mayo to the bread with a drop of maple syrup. Smoked gouda. Awesome…. melty wonderfulness.  
I fried the left over apple slices in the grease and added some cinnamon and sugar. I could die happy. Almost as good as Gods Dinner.

Prosciutto and Melon
This is a typical Italian appetizer, at least in my family. Definitely wonderful if you enjoy the salty and sweet. The flavors go so wonderfully together. I feel like it may come across as a little weird, but I don’t think it’s any more weird than cheese and apples… which by the way is delicious. 
I keep seeing pictures online of the prosciutto being wrapped around the melon but my grandmother insists that it should be draped like shown in the picture. She actually got frustrated with me when I tried to make it look pretty!

Balsamic Honey Glazed Pork -
I feel bad because I feel like at least half of my followers at this point are vegan/vegetarian and I post a lot of meat! I’ll work on my vegan recipes soon. 
I’m not sure if you guys have noticed but I added a donate button! Food is expensive. I want to update all the time but I can’t afford to! Donations would be greatly appreciated. Plus. I’m also a starving college student. I need good nutrition to be able to do well in school right? 
I found this recipe online and I vaguely followed it. I didn’t add any mustard because I didn’t have any.. I don’t think it mattered too much. I adjusted the recipe to match how much pork I had.. since I was only cooking for myself. I definitely had too much sauce even when I cut the recipe in half.
Anyway… I’d add more but I have class in the morning and I’m still not done with The Hunger Games soooo I’ll probably be up all night reading.

Coconut Panko Breaded Chicken (long post, sorry)
So I’ve been pretty busy for the past few days! I went to New York for the weekend with some of my friends, it was pretty neat. I meant to upload this and the muffin recipe before I left but didn’t really have time. Food in New York is so good, even the hot dog stands. Although I would avoid getting roasted chestnuts from any vender.. I learned that lesson on my last trip. The only downside was that I spent so much money! Not on clothes or souvenirs but on food.. but honestly the food was one of the highlights of the trip. 15 dollars for a hamburger is a bit much for me. I ate a bagel every morning! Unfortunetly I didn’t get any pizza. Next time. Tomorrow I’m going to Montreal for two days. It’ll be my first trip outside the US. I’ve heard it’s a lot prettier than NY. I hope so. I also hope the air won’t be as dirty. I’m rather fond of being able to breathe. ANYWAY. Before I left I made some chicken. I had this idea when I was at work. I was just sort of standing around between customers when suddenly I was like, “what if… what if. wait guys. what if I marinated chicken with coconut milk?”. My original plan was to bread the chicken in coconut panko and fry it in coconut oil but the oil is so expensive! This came out so amazing anyway that it doesn’t really matter. The coconut milk makes the chicken slightly sweet and moist. So good. Here’s the recipe (roughly):
5-6 Chicken tenders. (I feel like you can use as many as you want. Also you may use chicken cutlets too, it’d probably be better in fact).
2 Cups Coconut Panko. I bought this at my grocery store near the seafood department but I’m not sure if you can get it everywhere. So I’d suggest buying regular panko which would be near the breadcrumbs and mix in shredded coconut! Also again 2 cups is around what I used but it depends on how much chicken you want to make. 
1 Egg
1 Can of coconut milk (goya is my favorite). 
1 Lime
Alright so I got a freezer ziplock bag and put the chicken inside, I emptied the can of coconut milk and squeezed the lime juice inside. I thought it would be tasty to add the lime but you couldn’t really notice. Next time I’m either going to use more or not at all. Put the chicken in the fridge and marinate for an hour, ideally two hours if you have the time. Here’s how I set things up. I have the pan heated on medium with olive oil coating the bottom. I use olive oil for everything but vegetable oil wouldn’t hurt either. It might have a lighter taste. Directly next to the pan I have parchment paper laid out with the panko on it. I use parchment paper because it’s an easy clean up and gives you more room to work. Next to that you have a bowl with your beaten egg. Here’s where things get a bit gross. With clean hands take the chicken out of the ziplock bag. It’ll be completely coated with coconut milk. You could just put it straight into the panko without the egg but the panko will fall off your chicken much easier if you do that. The egg keeps it together. So dip your chicken into the egg, make sure to let excess egg drip back into the bowl. Place chicken in panko and with the palm of your hands push the chicken down making sure that the panko stays on. Pick the chicken up and shake it a bit to remove the loose pieces. Put the chicken in the pan and cook on either side until golden brown. Remove and pat with a paper towel to get rid of excess oil! You should pause in-between cooking the chicken to remove burnt panko. The burnt pieces get really annoying and don’t look so appetizing. This can probably be avoided if you have patience (which I do not) and just cook the chicken longer on a lower temperature! Oh well. I just ate these like chicken strips by themselves but you could serve them with rice and snow peas! Nothing too heavy though. I don’t feel like mash potatoes would go too well with this dish. Anyway enjoy!

Oat Orange and Chocolate Chips Muffins
I kind of went on a oat spree lately. I found this recipe from a cozy kitchen. I absolutely adore Adrinanns blog, go check her out.  I think I may have added a little too much flour because I accidently read “3/4 cup flour” as thirds.. I took out what I put in but who knows… 
These muffins are very filling according to my roommates. The orange flavor isn’t too overwhelming. Despite being filling they taste very light. Making the oat flour was fun to do. Instead of using a food processor I used a coffee grinder. My food processor is huge so a coffee grinder was much more convenient. 
Great for breakfast or a snack! Check out the recipe through the link I provided above.
